Set aside. Place all the fruit in another bowl and combine with orange juice. Top with yogurt sauce and serve immediately.<\/p>\n<p><strong>C<\/strong><strong>auliflower \u201cPotato\u201d Salad<br \/>\n<\/strong>Recipe from Primavera Kitchen at:<br \/>\n<a href=\"http:\/\/www.primaverakitchen.com\/cauliflower-potato-salad-recipe\/\">http:\/\/www.primaverakitchen.com\/cauliflower-potato-salad-recipe\/<\/a><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><em>For Salad:<\/em><\/p>\n<ul>\n<li>1 large cauliflower head, cut into florets<\/li>\n<li>\u00bd cup red onion, chopped<\/li>\n<li>\u00bd yellow bell pepper, chopped<\/li>\n<li>1 cup celery, chopped<\/li>\n<li>3 hardboiled eggs, chopped<\/li>\n<\/ul>\n<p><em>For Dressing:<\/em><\/p>\n<ul>\n<li>\u00bd cup plain Greek yogurt<\/li>\n<li>\u00bc cup + 1 Tbsp. mayonnaise (look for one made with olive oil)<\/li>\n<li>2 Tbsp. Dijon mustard<\/li>\n<li>1 tsp. garlic, minced<\/li>\n<li>Salt and pepper, to taste<\/li>\n<\/ul>\n<p><em>For Topping:<\/em><\/p>\n<ul>\n<li>\u00bd tsp. ground paprika<\/li>\n<li>2 slices prosciutto, chopped<\/li>\n<li>1 tsp. chives, chopped<\/li>\n<li>Fresh drill, chopped<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong> Start off by steaming the cauliflower: fill a large pot with 2 cups of water and place a steamer basket on the bottom. Bring to boil. Place the cauliflower florets into steamer basket and cover. Steam until cauliflower is tender (about 6-8 minutes). Remove from water and let cool. Next, Place cauliflower in a large bowl and add all salad ingredients. Set aside. In a small bowl combine all the dressing ingredients together. Pour over salad ingredients.
